Lychee Sorbet
This is so simple - and it seems unbelievable that something so delicious can be made from just two ingredients.
Preparation:
- In a food processor, pulse the lychees to a puree. Pass these through a fine mesh strainer, pressing to extract as much juice as possible.
- Mix this juice with the reserved syrup and add lime juice to taste. In a medium pot, heat this sugary liquid in 240 ml of water until all the granules are dissolved.
- Place in an ice cream machine and follow the manufacturers instructions. OR alternatively, place in freezer-proof plastic tub and freeze, forking through the mixture every hour or so to disperse the ice crystals. The correct texture should be achieved after 4-6 hours.
