Thai Red Pork Curry

A quick and easy pork curry that can be cooked in minutes

Preparation:

  1. Cut the pork fillet into thin slices. Heat the groundnut oil in a large wok and fry the red curry paste, minced ginger and garlic for 30 seconds.
  2. Add the Blue Dragon Coconut Milk to the wok. Add the pork.
  3. Then slowly add the Blue Dragon Fish Sauce, juice of half a lime and sugar to taste. Bring to the boil and simmer for 5-6 minutes or until tender.
  4. Serve scattered with thinly shredded red chilli.
