Spicy Garlic Wild Mushrooms on Toast
Simply, posh mushrooms on toast! The sweetness of the brioche perfectly compliments the earthiness of the wild mushrooms.
Preparation:
- Trim the base of the ceps with a sharp knife to remove any woody or dirty bits. Now slice the ceps lengthways into 4. Leave any girolles whole, but carefully brush off the dirt. Do not wash the mushrooms since they will soak up the water. Finely chop the chillies and the garlic.
- Heat a good few tablespoons of olive oil and the butter in a heavy pan and add the chilli and garlic. Let the flavours infuse for 3 minutes, making sure they don't burn. Season. Cook on a medium heat for 5 minutes, gently tossing them, until tender.
- Meanwhile toast two slices of brioche, spread with butter and place the mushrooms on top, making sure to drizzle over the pan juices. Garnish with a sprinkling of chopped parsley.

To prepare mushrooms, you must always remember not to wash them as they will absorb moisture and this will affect the taste and make them soggy... more
