Stir Fried Duck with Apples
This is a sumptious dish to be enjoyed at any time of the year. Serve with creamed potatoes for a spoiling mid-week dinner
Preparation:
- Remove any fat from the duck breats and slice into 1cm slices.
- Marinade the slices of duck breast in the soy and honey for at least one hour.
- In a wok or a pan, heat the oil and add sliced onions and apples. Stir-fry until the onions are almost soft,
- Add the duck and continue to stir-fry for 2-3 minutes.
- Add the sauce and the remaining ingredients, heat through and serve immediately.

To stop the discolouration of chopped apples, place in a bowl of water with the juice of a lemon or lime... more
