2 chicken breasts or 250g chicken thigh,
sliced into strips

A large handful of sliced red pepper
A handful mangetout
A handful baby corn, diced
A few coriander leaves and a sliced red
chilli to garnish
Steamed Basmati or Jasmine rice to serve
