Aromatic & Fragrant Chicken Thai Green Curry

You can't go wrong with a Thai Green Curry. Our Blue Dragon Paste is ground from fresh ingredients in Thailand so they don't lose any of that amazing flavour. Make it yours with a dash of fish sauce, coriander or fresh lime. Amazing.

  • 1 tbsp. vegetable oil

    2 chicken breasts or 250g chicken thigh, sliced into strips

    Blue Dragon Thai Green Curry 3 Step

    1 tsp. Blue Dragon Fish Sauce

    A large handful of sliced red pepper

    A handful mangetout

    A handful baby corn, diced

    A few coriander leaves and a sliced red chilli to garnish

    Steamed Basmati or Jasmine rice to serve

    1. Heat a tablespoon of oil in a deep frying pan and add your chicken strips. Once sealed, add the paste sachet from your 3 Step and coat the chicken.
    2. Let it sizzle for a couple of minutes before pouring in the Coconut Milk sachet, stirring to combine.
    3. Throw in your red pepper, baby corn and mangetout and bring to a simmer. Then add the sachet of dried Thai herbs and however many chillies you want from the pack. 1 for medium, 2 for hot.
    4. Taste your curry and balance the flavours with a dash of fish sauce, teaspoon of sugar or squeeze of fresh lime. Simmer for a few more minutes and serve with steamed rice, a scattering of coriander leaves and some slices of fresh red chilli if you want it even hotter.
