This is one for you heat seekers. Upgrade your toast with our juicy prawns and fiery Sriracha salsa.

For the Prawns
400g prawns
3 cloves of fresh garlic, finely sliced
1 tbsp of olive oil
A handful of coriander
3 tbsp Blue Dragon Sriracha sauce
30g butter
Lemon Juice
Salt
8 Ciabatta slices
For the Salsa
250g fresh tomatoes
1 small red onion
1 tbsp Blue Dragon Sriracha sauce
Drizzle some olive oil on the sliced ciabatta bread, toast under the grill on just one side for a few minutes and then set aside.
Finely chop all the ingredients for the salsa, add into a bowl with the Sriracha and lightly mix together with your hands.
In a frying pan heat a tablespoon of olive oil and sauté garlic till light brown.
Add prawns, stir fry for a minute and add Blue Dragon Sriracha sauce and the butter.
Fry till the prawns are cooked - turning occasionally, squeeze in the juice from ¼ of lemon, season to taste, and garnish with freshly chopped coriander.
On a warm ciabatta slice (untoasted side), add a tablespoon of salsa and load with prawns, drizzle some sauce and serve hot.
