Sweet Chilli Chicken Noodle Salad

Cold salad of sweet chilli chicken with rice noodles, chillies, mangetout, baby spinach, spring onions, coriander and cashews.

  • 100g dried rice noodles

    10g mangetout

    100g cooked chicken

    2 tbsp Blue Dragon Sweet Chilli Sauce

    Juice of 1/2 a lime

    Handful of baby spinach

    2 spring onions, sliced

    1 red chilli, deseeded and finely sliced

    Handful of fresh coriander, chopped

    25g roasted cashew nuts

    1. Cook the rice noodles according to package instructions. Drain well and cool under running water, then drain again. Set aside.
    2. Blanch the mangetout in boiling water for one minute. Using a slotted spoon, transfer the mangetout to a bowl of iced water. Allow to cool for 3-4 minutes, then drain well and dry on kitchen paper.
    3. In a bowl, combine the chicken with the noodles, sweet chilli sauce and lime juice. Stir to coat.
    4. To assemble, place the spinach in a bowl. Add the sweet chilli noodle mixture, then top with the mangetout, spring onions, sliced chilli and fresh coriander. Garnish with the cashew nuts and serve.
