Sweet Chilli Halloumi wrap

Large wrap packed with crunchy rainbow-coloured vegetables and grilled Halloumi strips in sweet chilli sauce.

  • For the Halloumi:

    • 1 tbsp oil
    • 100g Halloumi, sliced 1/2cm thick
    • 2 tbsp Blue Dragon Sweet Chilli Sauce
    • Squeeze of lemon juice
    • Black pepper

    For the wrap:

    • 1 tortilla wrap
    • Handful of watercress, rocket or baby spinach (or a mixture)
    • 1 small carrot, grated
    • 1/2 a yellow pepper, deseeded and sliced
    • 2 radishes, thinly sliced
    • 1/2 a small red onion, finely sliced
    1. Heat the olive oil in a non-stick pan over a high heat. Cook the Halloumi slices for 3-4 minutes per side until golden.
    2. In a bowl, combine the sweet chilli sauce with the lemon juice. Add the hot Halloumi, season with black pepper and toss to coat.
    3. To assemble, lay the tortilla wrap out on a chopping board. Layer with the leaves, carrot, pepper, radishes and red onion. Add the sweet chilli Halloumi. Roll up tightly and slice in half.
