Beef with oyster and spring onion sauce

Rich, indulgent and savoury, in this dish beef highlights the smooth flavour of our oyster and spring onion sauce beautifully

    • 30ml peanut oil
    • 500g beef fillet, thinly sliced against the grain
    • 1 small brown onion, peeled and thinly sliced
    • 1 small bunch spring onions, sliced
    • 200g mixed asian mushrooms (eg. enoki, shitake, oyster)
    • 100g broccoli, blanched, refreshed and cut into 3cm lengths
    • 1 sachet Blue Dragon Oyster and Spring Onion Stir Fry Sauce
    1. Heat a large wok over a high heat. When hot, add peanut oil and when smoking add beef fillet, stir fry 1 – 2 minutes or until seared. Add brown onion and half of the spring onion and continue to cook for a further 2 minutes.
    2. Add mushrooms, stir fry 3 – 4 minutes until majority of any moisture they give off is evaporated, then add blanched broccolini and continue to fry 1 - 2 minutes. Add Blue Dragon Oyster and Spring Onion Sauce and cook a further 2 – 3 minutes.
    3. Garnish with remaining spring onion and serve
