Coconut Rice Pudding with Lime

Nice and sweet with a subtle hint of lime- the perfect pudding rice!

    • 175g (6 oz) pudding rice
    • 4 limes, zested and juiced
    • 1 can (400ml) Blue Dragon Coconut Milk
    • 425ml water
    • 1 can (297g) condensed milk (sweetened) (or 100g sugar)
    • Brown sugar
    • Mango, diced
    1. Place the pudding rice, finely grated rind and juice of limes, Blue Dragon Coconut Milk and water into a large saucepan.
    2. Bring to the boil and simmer very gently, uncovered for 25 minutes stirring occasionally.
    3. Stir in a can of sweetened, condensed milk or sugar and leave to cool slightly. Spoon into individual serving bowls and scatter with roughly diced ripe mango and brown sugar.
