Ramen Noodle Salad

A light and refreshing noodle salad bursting with fresh Japanese flavours.

Serves: 4
    • 2 tbsp. clear honey
    • 2 tbsp. Blue Dragon Fish Sauce
    • 2 tbsp. Blue Dragon White Rice Vinegar
    • 2 tbsp. Blue Dragon Mirin
    • 1 medium sized lemon
    • 250g Blue Dragon Medium Egg Noodles
    • 1 courgette, very finely sliced
    • 2 carrots, very thinly sliced
    • 4 spring onions, finely chopped
    • 1 bunch mint leaves, roughly chopped
    • 2 tbsp. sesame seeds, toasted
    1. Combine the honey, Fish Sauce, White Rice Vinegar and Mirin in a small saucepan and slowly bring to the boil.
    2. Take off the heat and let cool.
    3. Once the dressing is cool, add the zest and juice of the lemon.
    4. Cook the noodles until tender, drain and rinse under cold water.
    5. Mix the noodles with the dressing, vegetables and mint and season to taste.
    6. Top with toasted sesame seeds.
