Shredded Duck Flatbreads with Hoisin Sauce

Gorgeous shredded duck on soft flatbreads with grilled peppers and spring onions.

Serves: 4
    • 2 duck legs
    • Vegetable oil or duck fat (enough to confit)
    • 200g flour
    • 10g sugar
    • 2 tbsp. dry yeast
    • 1 tsp. salt
    • 50ml water
    • 50g spring onion
    • 100g red pepper
    • 100g cucumber
    • 120g Blue Dragon Rich Hoisin Sauce
    • Sesame seeds
    1. Heat up oil to 120 C and then leave confit in the oven for 2-3 hours.
    2. Remove and shred, mix with Hoisin stir fry sauce.
    3. Prepare your peppers (dice into small pieces).
    4. Mix flour, yeast, sugar and water in a bowl. Then add salt and more water and let rise for 30min-1hour.
    5. Punch out your dough and roll out small flatbreads. Put your dough in a hot oven 220C for about 3-5 minutes.
    6. Remove and layer ingredients: sliced cucumber, spring onion, pepper meat and sesame seeds. Serve with fresh coriander.
