Thai Chicken Fried Rice

Chicken fried rice bursting with fresh, tasty Thai flavours and ingredients, including lemongrass, lime and coriander.

    • 2 tbsp. vegetable oil, for frying
    • 2 chicken breasts, minced or chopped finely
    • 2 cloves garlic, peeled and finely chopped
    • 2 bird's eye chillies, finely chopped
    • 1 onion, finely sliced
    • 1 tbsp. Blue Dragon Fish Sauce
    • 1 red or yellow pepper, sliced into strips
    • 1 tbsp. dried lemongrass
    • 1 tbsp. Blue Dragon Light Soy Sauce
    • 1 tbsp. lime juice
    • 1 tsp. brown sugar
    • 2 kaffir lime leaves - crushed
    • 225g rice, cooked
    • Handful coriander leaves - torn
    1. In a wok or frying pan, heat the oil and add the chicken. Fry on a high heat until the chicken is cooked through. Remove the chicken from the pan and put to one side.
    2. Drain all but 1 tbsp. of the oil in the pan. Place the garlic, chillies, onion and pepper in the pan and stir fry until the onions are soft.
    3. Return the chicken to the pan along with the Blue Dragon Fish Sauce, Blue Dragon Light Soy Sauce, lemon grass, lime juice, sugar, kaffir lime leaves and rice. Stir fry until the rice is heated through.
    4. Toss in the coriander leaves and stir through. Check the seasoning and amend if necessary.
    5. Serve immediately onto a large dish for all to enjoy!
