Thai Ginger Chicken Stir Fry

A zingy ginger chicken stir fry that's packed with fresh flavours and only takes 15 minutes to prepare and cook.

    • 2 tbsp. Blue Dragon Fish Sauce
    • 1 tbsp. Blue Dragon Oyster Sauce
    • 1 tsp. sugar
    • 2 tbsp. rapeseed/canola oil
    • 2 chicken breasts, cut into bite sized pieces
    • 2 cloves garlic, minced
    • 1 red pepper, thinly sliced.
    • 1/2 onion, thinly sliced
    • 2 tbsp. fresh ginger, cut into matchstick sized pieces
    • Cooked white or brown rice for serving
    1. In a small bowl, mix together the Fish Sauce, Oyster Sauce and sugar. Keep near the hob, along with the chicken and vegetables.
    2. Heat a wok over a high heat until very hot. Add the oil and swirl the pan to coat the bottom.
    3. Add the chicken and sear for 1 minute. Add garlic and stir through until chicken is lightly browned.
    4. Add the green onions, bell pepper, onions, ginger and sauce. Stir-fry for 2 to 3 minutes until the chicken is cooked through and the peppers and onions are tender.
    5. Serve immediately with plain white or brown rice
