Sweet Chilli Chicken, Mango & Supergrain Salad

Enjoy this sweet chilli chicken salad during the summer for a refreshing update to your lunch.

    • 1 chicken breast, sliced into strips
    • 1 pack ready to eat grains of your choice
    • ½ ripe mango, peeled & diced
    • Handful cherry tomatoes halved
    • Juice of ½ lime (save the other half to serve)
    • 1 little gem lettuce, leaves separated & torn
    • Handful of coriander, chopped
    • ½ avocado, de-stoned & sliced
    • Sesame seeds
    • Blue Dragon Light Sweet Chilli Sauce
    • Heat a pan with 1 tbsp oil and gently fry chicken strips until cooked and set aside (or use pre-cooked chicken strips).
    • In a mixing bowl, combine your grains, coriander, lime juice and 2 tbsp Blue Dragon Light Sweet Chilli Sauce.
    • Stir to combine.
    • Using a mason jar or a Tupperware, arrange your salad in layers, starting with the grains, followed by chicken, lettuce, mango, tomatoes & avocado.
    • Sprinkle over 1 tsp sesame seeds, another tbsp. of Sweet Chilli Light & a squeeze of lime and you’ve got lunch sorted.
